Chicken and Rice Burritos

This recipe is for chicken and rice burritos that we had for dinner last night. They were amazing and super quick to make! Try them and let me know what you think.

Chicken and Rice Burritos

1 Can (15 oz.) corn, drained
1 Can (15.5 oz) black beans, drained
3 cups cubed cooked chicken
1 1/2 cups cooked rice, cooked in 1 teaspoon chicken bullion
3/4 Cup chunky salsa
1/2 lime freshly squeezed lime
Grated cheese
tortillas

Directions:
Cook rice according to package directions making sure to add 1 teaspoon chicken bullion to the water while cooking. Mix corn, beans, chicken, rice and salsa in a pan. Stir to until heated through. Spritz with fresh lime juice. Melt cheese on tortilla and then spoon chicken and rice mixture onto the tortilla. Fold burrito style and enjoy!

*Notes*
  • You really do need the lime to get the full flavor and amazing goodness of this recipe!
  • You can cook the rice and chicken at the same time or cook the rice and/or chicken the night before.
  • The best way to cook and cube chicken for recipes: Place thawed chicken breasts on baking tray. Sprinkle with salt and pepper. Bake at 350 degrees Fahrenheit for 28 minutes (or until done=no pink). Let sit for 10 minutes. Cut into cubes.
