Chicken and Rice Burritos
1 Can (15 oz.) corn, drained
1 Can (15.5 oz) black beans, drained
3 cups cubed cooked chicken
1 1/2 cups cooked rice, cooked in 1 teaspoon chicken bullion
3/4 Cup chunky salsa
1/2 lime freshly squeezed lime
Grated cheese
tortillas
Directions:
Cook rice according to package directions making sure to add 1 teaspoon chicken bullion to the water while cooking. Mix corn, beans, chicken, rice and salsa in a pan. Stir to until heated through. Spritz with fresh lime juice. Melt cheese on tortilla and then spoon chicken and rice mixture onto the tortilla. Fold burrito style and enjoy!
*Notes*
- You really do need the lime to get the full flavor and amazing goodness of this recipe!
- You can cook the rice and chicken at the same time or cook the rice and/or chicken the night before.
- The best way to cook and cube chicken for recipes: Place thawed chicken breasts on baking tray. Sprinkle with salt and pepper. Bake at 350 degrees Fahrenheit for 28 minutes (or until done=no pink). Let sit for 10 minutes. Cut into cubes.
